Join us for one of our best hands-on classes for new bakers. In this two-day class*, we'll teach you how to make traditional French baguettes the Zingerman's Bakehouse way. Most commercial bread in stores labeled “baguette”, are soft and bland, bearing no resemblance to the traditional French bread that Parisian bakers first developed around 1920, in response to a law that went into effect forbidding them from starting their workday before 4am. Baking long, thin loaves took less time to make than naturally leavened rustic breads, so Parisian bakers were able to get them mixed, formed, and baked in the short window before their shops opened. In keeping with French tradition, the Bakehouse's baguettes have an authentically crispy exterior and a beautifully holey interior, which we'll teach you in this class. Tear one open and the thin crunchy crust will shatter and the airy open crumb inside will give off that sweet aroma of fresh baked bread.
On Day One, we'll meet to discuss and mix a flavorful poolish (bakers call it a pre-ferment, it’s like a starter), before letting it sit overnight, and we'll answer any questions you may have. On Day Two, we'll make our bread dough, go over the techniques of hand rolling and shaping the dough into baguettes, which we'll proof and then bake to a crispy golden brown. Imagine serving breakfast to out-of-town guests and bringing out a perfect baguette that they swear must have been airlifted from Paris.
You'll leave the BAKE! class with our French baguette recipe, the knowledge to recreate it at home, and the French baguettes you made in class.
* Please note, this virtual class takes place over two consecutive days. On Day One, we’ll meet to mix our poolish and answer any questions you might have. On Day Two, we will be mixing, shaping, and baking our baguettes.
