Your Move: Chess Pies

You won’t learn the Queen’s Gambit here, but we'll teach you our best strategies for something equally as challenging—pie! In this hands-on class, we’ll set you up for success in creating two favorite Bakehouse pies—Chocolate Chess and Lemon Chess—including their flaky, all-butter crusts. We’ll deliver the techniques of how to make a pie crust the Zingerman's Bakehouse way—creating a flaky crust with butter. We'll teach you how to make the dough by hand and successfully roll it out, show you what "par-baking" and "blind-baking" a crust means, and also how to crimp the edges to make your pies look beautiful. 

Chess pies are a Southern tradition. Chocolate Chess pie features a creamy baked chocolate custard, while Lemon Chess is made with lots of fresh lemon juice, fresh lemon zest, and a splash of buttermilk. Both are sure to be winning additions to your baking repertoire!

You'll leave the BAKE! class with our recipes, the knowledge to recreate them at home, and the two chess pies you made in class.

In-Person: We'll end class with a pie tasting and you'll also go home with some great coupons.

Our Basic Pastry Kit is ideal for newer pastry bakers, and includes tools we typically use for baked goods like scones, cookies, and brownies.
